I did some more thinking and discovered how to run terminal commands on Mac OS X in the background with applescript. This article, here, at MacOSXHints is what helped.
1) Create a new script in the Script Editor.
2) Add the following line: (Replace "profileName")do shell script "/Applications/Firefox.app/Contents/MacOS/firefox -P profileName"
3) Save as an Application Bundle.
4) Control-click the icon > Show Package Contents > Contents > Info.plist
5) After these two lines: (Replace all "*" with "<". Whats the proper way to do this?...)*key>LSPrefersCarbon*/key>

*string>1*/string>6) Save, set icon, and launch.

The method the author listed for shortcuts won't work in OS X, because (as far as i have been able to determine), there is no way to manually edit the path for a shortcut (love OS X but that's incredibly weak). So far the only solution i have found is a little wonky to implement, but unless you're planning on making lots of different profiles, it's not that bad.
1. Create a profile, we'll use "webdev" as an example.
2. In your favorite text editor, type the following lines:#!/bin/sh
/Applications/Firefox.app/Contents/MacOS/firefox -P "webdev"and save it as Firefox.webdev (if your editor adds a .txt extension, delete it).
3. Download and install "Launcher" from this page: http://www.maths.mq.edu.au/~steffen/tcltk/Launcher/ (scroll a bit)
4. Set your saved script to always open with Launcher (simplest way: right-click the icon > "Open with" > "Other..." > select Launcher from the list > Make sure "Always open with" is checked, "Open" (or return key).I also copy the icon from Firefox to the script, but this isn't essential. With Firefox selected in the Finder, hit cmd+i to get info. Click the icon in the top right and hit cmd+c. Then get info on your script the same way, click its icon, and cmd+v.
Like i said, a bit wonky, but it's the only way i know of to create a shortcut to an app with command-line parameters (in this case, -P for profile manager). You can also run these concurrently, i often have my webdev profile and my default profile open.
