    After banging my head on keyboard, monitor desk, etc. for months on this same issue, after many, many greps it turned out to be a simple fix for me. The file /etc/papersize in my Ubuntu setup contained 'a4'. I changed this to 'letter' and voila, my spreadsheet finally came up with default paper size of 'letter'
