You might check out the work of Jim West and Peggy West, both of Western Illinois University. They co-wrote "Using Wikis for Online Collaboration" for Jossey-Bass's series of Online Teaching and Learning Guides. I just saw Jim and Peggy present about their use of educational wikis at JB's Online Teaching and Learning Conference. Their presentation was great (so was the conference), and they've earned a wealth of experience about wikis and learning.
