And by working with school food service employees, administrators and teachers -- chefs can help deliver these messages from the cafeteria to the classroom.

    Roberta Duyff Interview

    • Roberta L. Duyff, MS,  RD, FADA, CFCS, a nationally-recognized  food/nutrition expert, promotes the "great tastes of good health"  to consumers of all ages. As a food industry/government consultant ,  author/writer, media spokesperson, and national speaker,  Roberta  supports the “power of positive nutrition” with practical, science-based,  great-tasting ways to eat for health!
    • Roberta has written 19 books and contributed to many others,  including the comprehensive and award winning American Dietetic Association Complete  Food and Nutrition Guide  (now in its third edition, 2006) and 365  Days of Healthy Eating from the American Dietetic Association  (2004) with its flavorful recipes and active living tips (John Wiley). Other  consumer titles include Monthly  Nutrition Companion, Food Folklore: Truths and Myths Behind  the Foods We Eat,  as well as 50  Ways to Lower Your Fat & Cholesterol with  Tufts University School of Nutrition.

    Understanding the Healthier U.S. Schools Challenge Program
    As mentioned in Michele Obama’s Let’s Move Campaign, the Healthier U.S. Schools Challenge Program challenges schools to serve healthier meals in their cafeterias and gives them a chance to earn funding to achieve this goal.

      • The overarching goal of the HealthierUS School   Challenge (HUSSC) is to improve the health of   the Nation’s children by promoting healthier   school environments. To help meet the goal, the   Food and Nutrition Service  (FNS) identifies schools that have made   changes to 

           
        1.  

          improve   the quality of the foods   served,

        2.  
        3.  

          provide   students with nutrition   education, and

        4.  
        5.  

          provide   students with physical   education and opportunities   for physical activity.

    • Schools receiving a HUSSC award will commit to   meeting the criteria throughout their 4-year   certification period.

    • The HealthierUS School Challenge (HUSSC) is a voluntary initiative  established in 2004 to recognize those schools participating in the National School  Lunch Program that have created healthier school environments through  promotion of nutrition and physical activity.
    • In February 2010, First Lady Michelle Obama  introduced  Let’s Move!, incorporating the HealthierUS School Challenge into her campaign to raise a healthier generation of kids.  At that time, monetary incentive awards became available for each HUSSC award level: Bronze, Silver, Gold, and  Gold Award of Distinction.
    • The Healthier US Schools Challenge Program establishes rigorous standards for schools’ food quality, participation in meal programs, physical activity, and nutrition education – the key components that make for healthy and active kids – and provides recognition for schools that meet these standards.
    • Schools can participate in this model program by going to http://www.fns.usda.gov/tn/healthierus/index.html and learning about the range of educational and technical assistance materials that promote key aspects of the Dietary Guidelines, including a Menu Planner for Healthy School Meals, which provides tips on serving more whole grains, fruits, and vegetables, and lower amounts of sugar, sodium, and saturated and trans-fats in school menus.

    • Let’s Move will give parents the support they need, provide healthier food in schools, help our kids to be more physically active, and make healthy, affordable food available in every part of our country.
    • In an announcement Tuesday, the first lady said that the 'Let’s Move' plan is to deliver healthy and affordable food to schools and neighborhoods by reauthorizing the Child Nutrition Act.
    • Some Let’s Move projects such as increasing half the number of schools that meet the Healthier U.S. School Challenge are set to be achieved by next year.

    Becoming a Healthy Role Model

    • People are struggling with maintaining healthy food choices. It is not surprising because they are constantly bombarded with conflicting information about what’s healthy and what’s not and they are also given numerous choices when it comes to food products.
    • First of all, if you are going to buy meat, vegetables and fruits, do not buy those that are packed with oil. If you need to buy these food products, make sure that you buy those that are packed in water. Chances are the water will likely reduce the calories in meat products. Do not buy products that are labeled “hydrogenated”.
