• Q. How often should my commercial establishment pump out its grease trap/interceptor?
   A. Orange County requires a minimum grease trap/interceptor pump-out frequency of every three months. However, based on the nature of your business's discharge, a more frequent pump-out frequency may be required as determined by the Environmental Compliance Section of the Water Reclamation Division. • Q. Are under-the-counter grease traps/interceptors permitted for commercial establishments?
   A. Under-the-counter grease traps/interceptors are only permitted for existing facilities that qualify for a variance to the current Orange County Building Code requirement. The variance request must be submitted to the Environmental Compliance Section of the Water Reclamation Division for consideration/approval. The variance request must provide the following information:

   
   
  • Physical limitations of the establishment that create a hardship for the installation of an outside grease trap/interceptor.
   
  • Calculations by a registered engineer verifying the size of the proposed under-the-counter grease trap/interceptor.
   
  • Proposed maintenance schedule for the under-the-counter grease trap/interceptor.
