This site tells the history of evolution and geology by looking specifically at the fossil record for horses.
Readability for 7-8 appears to be appropriate.
PBS' site on evolution: Darwin, change, extinction, survival, sex, humans, religion. Includes lots of short, interactive flash demos.
This site is a treasure trove of resources about human genetice history. There are interactive maps that trace the movement of people and genes throughout the ages (with video). There are some nice graphics (some interactive) that illustrate how genetics and evolution work. there are lesson plans (9-12) as well.
The site can take some time to load, so you wouldn't want everyone hitting it at the same time. Additionally, there is so much here that you would want to direct your students accordingly.
