I made a very small batch of these just for me & Mat, and they were fantastic and I will definitely make them again for a party. or just for us.
I used Puy lentils (aka French green lentils)
1 cup of each. I have used different flour/spice combos and they have all worked! Mat's favourite is when I mix a big pinch of cayenne and about 1 tsp of paprika in with the dough (1 cup unbleached all-purpose and 1 cup whole wheat) and then sprinkle with a healthy amount of sea salt before baking.
I always skip this step.
