To do in slow cooker: simmer lentils partway (5-6 min) - not sure if I actually needed to do that; brown other ingredients in skillet as suggested, then transfer everything to the slow cooker on high for 4h. I didn't make the bacon broth, just wedged a bit of smoked pork rib into the slow cooker with the lentils.
Slow cooker for 4h on high works. I started by browning a chopped onion, some dry chorizo, and 3 cloves of garlic on the stovetop, then transferred that, the squid, a can of tomatoes, a can of chickpeas, a tsp of smoked paprika and some bay leaves to the slow cooker.
use less water next time!! works with 5-5.5 cups (i.e. just barely cover the beans). Better than ham hock: smoked riblets from J&Z deli. Use green bell peppers and more cayenne and black pepper. Stir in cooked sausage toward the end.
okay, I barely followed this recipe... didn't marinate, left out the potatoes and added half a can of diced tomatoes which I just poured on top of the roast before starting the slow cooker. but it worked out really well and we served it over homemade pasta.
