    Ingredients
    4 c rolled oats
    1 c sliced almonds
    1 c chopped pecans
    1 c dried fruit (cranberries, blueberries, bananas, raisins, diced apricots
    ⅓ c safflower oil
    ½ c honey
    1 tsp vanilla extract
    1 Tbsp ground cinnamon
    Directions
    Stir together oats, nuts and dried fruit in large bowl. In separatesmaller bowl mix together the honey, oil, vanilla, and cinnamon. Pourthe liquid over the dry ingredients and stir until coated. Bake at 300degrees for 10 minutes, stir and cook for another 10 minutes. Coolcompletely and store in sealable container or bag.

    Ingredients:

    • 3 cups cooked diced chicken
    • 1 can cream of mushroom soup
    • 1 can cream of celery soup
    • 2 cups chicken broth
    • 1/2 cup melted butter
    • 1 package herb-seasoned stuffing mix, (6 to 8 oz)
    • 1 cup shredded cheese, Swiss or Cheddar

    Preparation:

    Combine soups and chicken broth; add diced chicken to the mixture. Add butter to dressing mix. Combine chicken mixture with the dressing mixture. Place in a 2 to 2 1/2-quart casserole and bake at 350° for 30 minutes. Top with shredded cheese during the last 5 minutes if desired.

    Chicken Rice Casserole

    Ingredients:

    • 1 cut-up frying chicken
    • 1 cup long grain white rice
    • 1 envelope onion soup mix
    • 1 can cream of chicken soup
    • 1 1/2 cans water
    • 4 ounces can sliced mushrooms
    • 1 teaspoon salt
    • 1/2 teaspoon pepper

    Preparation:

    Combine everything except chicken, mixing well; put into casserole.Arrange chicken on top. Bake at 350° for 1 hour, covered, then uncoverand bake 30 minutes more, stirring once. Variation: Use 3 cups waterand brown the chicken first. Also, you can bake covered at 325 for 11/2 hours.
