Frances Spiegel's List: Living Gluten Free

I've been experimenting with spring roll wrappers, also known as rice paper pancakes.  These are nearly always gluten-free and make very good crispy pastry. They take very little time to prepare although they are fragile and need careful handling.
 
In this recipe for Apple and Sultana Turnovers the wrappers came out golden and delicious. 

Made lentil roast a few days ago - a bit bland so increased cheese and onion - much better on the second attempt.
