Mr. Gorham drives round-trip to Kittery, Me., on Thursdays to buy up to 1,000 pounds of fresh lobsters off the boats. He does not buy lobsters from pounds, where they may have been lolling in the water for days or weeks, shedding flavor and texture.
Marlow & Daughters, the spin-off butcher shop from the folks behind Diner, Marlow and Bonita, is now open! The shop, which is located at 95 Broadway in Williamsburg, is the first in New York City that will sell exclusively grass-fed meat. The shop will also complement the Diner gang's philosophy of using every part of the animal. Bring it on!
