Breakfast Surprise
<!--I thought my youngest son had completely forgotten my request until later when he came knocking on my bedroom door with a letter that would make any mother of a 16-year-old son shed a few tears. His dream is to go into the Air Force, and he told me that because I was such a good mother to him and stood by him all his life that he knew that I would always be there for him if he needed me, even when he goes into the Air Force. //-->
10 large eggs or 2 (10-ounce) cartons egg substitute
1 (12-ounce) can evaporated milk
1/2 pound sausage or bacon
6-7 slices bread (any kind)
1 to 1 1/2 cups shredded cheddar cheese
1 to 2 teaspoons dry mustard
vegetables, such as onions or mushrooms
salt and pepper to taste
dash or two of cayenne pepper (optional)
<!--Thank you for giving me the best Mother's Day a mother could ever ask for. And by the way, as I was in the card store, I saw a young man looking frantically at all the cards. I tapped him on the shoulder and said, Write her a letter and tell her how you really feel about her. It will be better than what any Hallmark card can ever say.' Sincerely, Mom in MA //-->
Spray a 9x13-inch disposable metal pan (or a Glad OvenWare pan) with cooking spray or brush with melted butter. Tear bread into small pieces and place in bottom of pan. Cook and crumble sausage, or fry the bacon and arrange evenly over the top of the bread. Saute mushrooms and onions in the skillet and remaining fat. Place over sausage or bacon. In a bowl, mix together the lightly beaten eggs with the milk, dry mustard, salt, pepper, cayenne pepper and cheese. Pour over bread mixture. Cover and leave in refrigerator or ice chest for 24 hours.
<!--Today my plan was to encourage readers to skip buying a card for Father's Day and instead write their dads a letter, opting to spend time not money this year. But I don't believe that will be necessary. Mom in MA's letter has already done a good job of that. //-->
This can be cooked in a camper oven, on a camping stove, or on a barbecue. If cooked in an oven, cook at 350 F for 40-50 minutes. If cooked on the barbecue or camp stove, just keep checking and cook until eggs appear done all the way through, especially in the center.
Hint: Make this at home and transport assembled, but uncooked, for your first day’s breakfast.
