“Hobo” or Packet Dinners <!--�Mother's Day came and two of my kids called to wish me a Happy Mother's Day while my husband and parents went out for the afternoon. My oldest was doing his own thing, and I was OK with that.

1 hamburger patty per person 
1/2 carrot per person, peeled and cut into 1/4-inch slices 
1/2 potato per person, washed and cut into 1/4-inch slices 
1/2 onion per person, cut in rings 
salt and pepper, to taste
large pieces of aluminum foil, two per person

To make a packet, place the raw hamburger patty in the middle of double-thickness (two sheets) foil. Place the carrots, potatoes and onions on top of the patty. Add salt and pepper, keeping in mind you need enough seasoning for the meat plus all those vegetables. Pour 1 tablespoon of water over the pile. Pull the corners of the foil together and seal them tightly so nothing will leak out of the “pouch” including steam. 

Place on the metal grill over the campfire or on the barbecue grill and cook for 30 minutes. Use oven mitts and a sharp knife to carefully release steam from packets before opening and serving.

Breakfast Surprise

10 large eggs or 2 (10-ounce) cartons egg substitute
1 (12-ounce) can evaporated milk 
1/2 pound sausage or bacon
6-7 slices bread (any kind)
1 to 1 1/2 cups shredded cheddar cheese
1 to 2 teaspoons dry mustard
vegetables, such as onions or mushrooms 
salt and pepper to taste
dash or two of cayenne pepper (optional)

Spray a 9x13-inch disposable metal pan (or a Glad OvenWare pan) with cooking spray or brush with melted butter. Tear bread into small pieces and place in bottom of pan. Cook and crumble sausage, or fry the bacon and arrange evenly over the top of the bread. Saute mushrooms and onions in the skillet and remaining fat. Place over sausage or bacon. In a bowl, mix together the lightly beaten eggs with the milk, dry mustard, salt, pepper, cayenne pepper and cheese. Pour over bread mixture. Cover and leave in refrigerator or ice chest for 24 hours.

This can be cooked in a camper oven, on a camping stove, or on a barbecue. If cooked in an oven, cook at 350 F for 40-50 minutes. If cooked on the barbecue or camp stove, just keep checking and cook until eggs appear done all the way through, especially in the center.

Hint: Make this at home and transport assembled, but uncooked, for your first day’s breakfast.

Campfire Cobbler

1 (20-ounce) can crushed pineapple
1 (21-ounce) can pie filling (apple, cherry, etc.) 
1 box yellow cake mix 
1 stick butter or margarine

Pour crushed pineapple and the juice into a small Dutch oven (this is a cast iron or other heavy pot with a tight fitting lid). Add pie filling. Empty the dry cake mix evenly on top. Do not mix ingredients. Cut butter into small pieces and distribute over top of cake mix. Put lid on Dutch oven and bake in campfire with coals on top and bottom for about 45 minutes. This is a quick dessert that ends up looking and tasting like a cobbler. Servings: 6.
