In our setup, we keep all past Moodle semesters (we archive every semester) on a separate "moodlearchive" system. There are numerous ways to do what you want, but that probably doesn't help much if you've not done this yet! Here is how we do it. I hope it helps to at least get you started or answer some questions... We're happy to discuss this in more detail if you'd like. Also, each Moodle install on the archive is separate, so the version you ran on in production doesn't need to be upgraded when you move it to the archive system.
