Mango Mousse Recipe - Mixx
Place the coconut milk, cream and sugar in a saucepan and bring to the boil. Add mango puree to the mixture.
Dissolve the gelatin in hot water and stir it into the mango coconut cream mixture.
Allow the mixture to cool slightly and pour into glasses. Place on a tray and store under refrigeration.
Serve with mango compote, raspberry sauce, chopped pistachio nuts and a chocolate stick.
Mango Crème Brulee Recipe
Place the milk and cream in a saucepan and bring to the boil.
In a stainless steel mixing bowl whisk the white sugar and egg yolk until creamy in texture, pour in the milk and cream, mix well until combined.
Add the mango puree, using a spatula mix until the mango is incorporated into the cream mixture.
Strain, pour mixture into suitable ramekins and cook in a water bath at 160 degrees C for 30 minutes.
To finish glaze with white sugar and serve with brandy snap, mango compote and red currants.

Recipe- Mango Dressing
Place egg, lemon juice, mustard honey, mango puree and vinegar in a blender.
Blend to incorporate. Slowly add the olive oil in a steady stream.
Season with salt and pepper. Use as required.

Combine first 6 ingredients in a large bowl and stir well.
Add chicken and mango and toss gently to coat.
Arrange dark green lettuce leaves around a serving bowl and spoon mixture into bowl.

Bring the water and sugar to the boil;
add the mango puree and lemon zest.
Mix well to incorporate. Dissolve the corn starch in a
small amount of cold water add to the mango mixture.
