Amazingly low cost SPAM filtering at source. Change your DNS to point your MX entry at MailRoute and it filters everything before it gets to you. Recommended by Leo Laporte of TWiT & others.
Great little command line utility to index and search Maildir, MH or MBOX formatted mail folders. It creates a new mail folder with the results linked back to the mail so works transparently in any mail client that uses one of these formats for mail storage.

OfflineIMAP is a tool to simplify your e-mail reading. With OfflineIMAP, you can read the same mailbox from multiple computers. You get a current copy of your messages on each computer, and changes you make one place will be visible on all other systems. For instance, you can delete a message on your home computer, and it will appear deleted on your work computer as well. OfflineIMAP is also useful if you want to use a mail reader that does not have IMAP support, has poor IMAP support, or does not provide disconnected operation.

Useful add-on to Mozilla Thunderbird that allows the address book to show more info. Even more useful though is adding support for importing VCF files.
