I recommend you include the video link or embed the video into the relevant assignment and that you also create an html page with a catalog listing of each video used in your course. By using both a link/embed of a video in your assignment directions and a catalog page of all videos, you are providing your students with easy access to videos as they need them and also make it easy for them to find videos again without having to remember exactly where they first saw the video.

One way I have used to encourage students to share screencasts and do so in an easy way is to create a channel for your course. Then, you can get the widget for that channel and embed it in your course. Then, students can use the widget to create screencasts that will all be put in the channel. The two positives are that students don't need to have a screencast account to create the screencast and that all the created screencasts end up in one place so they are easier to find.
