在做面包时,通常第一次发酵后需要把气泡压去,再整型进行二次发酵。这时可直接把第一次发酵的面团使用dough功能揉3-5分钟,气泡就会揉去,这时再从面包机中拿去较好。原因是,第一次发酵好的面团如果直接从面包机中拿出,通常已粘在搅拌盆中、比较粘手、蓬松不易拿;刚揉好的面团则不同,结实并且还未粘在盆底,可直接倒出,而且这样省去自己压气泡。 能想到的就这么多了,大家有补充或是问题欢迎留言。
